Tongues started to wag almost immediately when Voya opened in 2008. Its dark, sensual decor and subtle fusion cuisine by master chef Marc Andre Choquette has gourmands a-twitter. Voya features a crisp, modern design and a menu that intelligently fuses French and Asian cuisine with other global influences. The kitchen uses fresh, local, organic and seasonal ingredients. In fact, Voya belongs to the sustainability organizations Green Table and Ocean Wise.
Top Chef, Top Menu
Marc-Andre Choquette was the former chef de cuisine at Vancouver’s world-famous Lumiere. He joined Voya after a year-long break from the restaurant scene. Breakfast/brunch items include: roast beet salad with goat cheese, maple candied walnuts, balsamic vinaigrette; poached eggs on brioche with smoked bacon, olive oil béarnaise; and a grilled serrano and camembert sandwich with horseradish mayonnaise. The Lunch menu includes: seared tuna with pickled young artichokes, anchovy tempura, quail egg and Moroccan olive dressing; a duck and pistachio terrine with pickled vegetables and coronation grape reduction; and poached wild salmon with chorizo, fennel and mussels. Dinner includes: eared scallops with poached pork belly, creamed leeks and maple bacon froth; roasted pheasant breast and braised leg cottage pie with smoked tomato jus; and braised lamb shank with butternut squash risotto.
Wonderful Wines & Spectacular Spirits
Voya makes a point of finding and serving new wines from around the world, with a preference for smaller wineries that farm responsibly. The wine list is regularly updated. Expert mixer Jay Jones creates some of the tastiest cocktails in town.
Good to know: Brunches and light fare are available in the Lounge, which is open until midnight Sunday through Wednesday and until 2:00 a.m. Thursday through Saturday.
