Speaking of stars, The Vancouver Sun gave MARKET five out of five. Local and out-of-town press have been lavish in their praise. Working with Vancouver wunderkind, Executive Chef David Foot, Vongerichten has produced a unique menu that reflects West Coast influences and international expectations. The restaurant is divided into four sections: a casual bistro with a fireplace; a heated outdoor terrace with city views; a bar; and an elegant fine-dining room.

Regional ingredients with global accents
Seasonal, regional ingredients and fresh, local seafood are the focus at MARKET by Jean-Georges . Lunch starters, for example, include: tuna tartar with spicy radish and ginger dressing; roasted beets with Okanagan goat cheese and balsamic vinaigrette; Dungeness crab cake with celeriac-pink peppercorn remoulade and ruby grapefruit; and steamed shrimp salad with tender greens, avocado and champagne dressing. Dinner entrees include: steamed wild Pacific sole with spaghetti squash and soy-yuzu nage; seared B.C. sirloin with gingered mushrooms and soy-caramel sauce; and organic chicken with salsify and lemon sauce.
