Owner Liberty Guftafson has turned the small bakery and coffee shop into so much more than just a pastry shop. The 10 tables inside Liberty are always busy for lunch as Vancouverites enjoy one of the bakery’s famous black bean, lime and chili or zucchini and potato soups. The turkey pest, red pepper olive, and hummus and artichoke sandwiches are also a favourite of many of Liberty’s regulars. Liberty also boats a huge assortment of cakes, Danishes, buns and pies great to eat in or take home. Don’t fret if you can’t get a seat inside; the bakery also offers seating on a small but cozy sidewalk patio for patrons to enjoy a taste of Liberty al fresco.
A Vancouver Original
Inside the bakery, the art on the walls and the tables themselves was all designed exclusively for the store by Liberty Guftafson’s daughter Anna, a prominent Salt Spring Island artist. Try the great selection of coffees and teas, but don’t forget to tip at Liberty as every dollar earned goes straight to charity and Liberty spreads the love by changing charities every two months. The Liberty Bakery is a family-owned business featuring great tastes and friendly service.
