The colour palette for Seattle may tend toward misty greens and greys, but you’ve only to check in to the Hotel Monaco to brighten things up a bit. Everything’s made in-house and Executive Chef Jason McClure makes magic using the giant wood-burning oven that overlooks the 185-seat dining room. Not only does the oven make for perfect cedar-planked salmon – it’s also eco-friendly. Want to learn how to cook like Jason? Sign up for his very popular “Little Bit of Lovin’ Classes”. Held quarterly on Saturday afternoons, you not only get to watch a pro in action, but you get to eat as well!
