A Touch of Class
You'll find Herons Restaurant and Lounge just off the lobby of the Fairmont Waterfront hotel. The decor matches the upscale menu perfectly, with the dining room decorated in northwest natural greens and browns. There’s plenty to take in, as the kitchen is open-concept and there are two-storey floor-to-ceiling windows looking out onto the harbour and the North Shore mountains. During the day, Herons caters mostly to tourists and business people. At night, the white linens come out and the fine dining begins, complemented by a pianist playing softly in the background.

Dishes are seasoned with herbs from the 2,100-square-foot herb garden on the hotel's third floor deck.
