Welcoming West Coast Style
Located in the award-winning four-diamond Victoria Marriott Hotel just steps away from historic downtown and the Inner Harbour, Fire & Water couldn’t be better positioned to delight diners. The restaurant features three separate dining areas to suit your mood, all of which are done up in rich woods, elegant fabrics and natural elements borrowed from the local coastline. Linger over an intimate meal in one of the private booths for two in the dining room, where a series of glass cases display art borrowed from the West End Gallery. Or enjoy the sights and sounds of the busy lounge, where you can grab at seat at a plush armchair and catch the game on the large flat-screen television. And when it’s nice out, the place to be is on the patio, which features ultra-modern white furnishings, and the soothing sight and sound of a running water fountain. You can linger outside well into the evening thanks to the space heaters and the extensive menu of specialty coffees and heart-warming scotches.
Fish and Chops Anchor the Menu
The name says it all: Fish and steak top the menu at this West Coast-inspired restaurant. Dishes from the sea include Qualicum Bay scallops, wild sockeye salmon and the fisherman’s hot pot. From the land, you can choose from rack of lamb, duck confit and chicken breast. The signature dish is the prime rib, which is marinated for 24 hours in a cognac brine, rubbed with house spice and seared in cast iron. All of the meals come with tasty local veggies and other artisan accompaniments. The artistic presentation is so impressive, you’ll want to take a picture!
Tempting Tapas and Delectable Desserts
Fire & Water is a great place to share some tapas before a night out or indulge in dessert at the end of the day. The restaurant often hosts tapas nights, at which excellent bottles of wine are available for pairing at $20 a bottle. The menu focuses on small plates from the sea such as Saltspring Island mussels and fresh-shucked oysters. The local cheese plate is also a popular choice. On the sweet side of the things, there are plenty of homemade choices such as local blackberry and rhubarb crumble and flourless chocolate cake.
